Let's make Pork Mince Curry #DaiichiPremiumPork
 
Ingredients: 1Kg Daiichi Pork Mince2 red chilis1 medium onion, 3 cloves garlic,1 inch fresh ginger, 4 cilantro roots or stems2 teaspoons shrimp paste (optional), 2 tablespoons oil2 tablespoons fish sauce, 1/2 cup water, 1 cup crushed tomatoes,1 tablespoon fresh lime juice,1 tbsp sugar, 1 bunch cilantro leaves
 
 
Method:
  1. Using a mortar and pestle,process the chilis, onion, garlic, ginger, and cilantro roots or stems, to a paste. Add the shrimp paste to the spice paste(optional). 

  2. Heat the oil in a large pan to medium. Add the paste and cook for about 5 minutes or until the paste has darkened in color.  Add the pork mince, increase the heat and cook for 5 minutes. Season the meat with fish sauce.

  3. Add the water and crushed tomatoes and continue to simmer for another 15 minutes or until the liquid has reduced. The meat should be fully tender.

  4. Add lime juice and sugar and cook for another 1-2 minutes. Taste and adjust the seasoning, if need be. Turn off the heat and stir in the fresh cilantro leaves. Serve on top of your rice.
